White & Yellow Teas

White and yellow teas are unique among teas. Authentic white tea is one of the rarest of all teas, coming from one particular varietal of tea plant found only in 2 counties in China and being the least processed of all teas. Yellow tea, though similar to green tea, adds an additional step to the processing that creates the yellow color and unique taste profile. Yellow tea is also rare and probably even less known in the U.S. than is white tea.
