Green Teas
Green teas are minimally processed in order to maintain their green color and to prevent oxidation of the leaf. This results in their unparalleled health benefits due to the abundance of antioxidants. Oxidation is skipped with this class of tea by applying various methods of drying by pan-firing, steaming or roasting which stops the enzymes in the leaf from breaking down the cells.
